Brinjal sabji /baingan sabji/brinjal sabzi is a tasty Indian dish which is prepared mainly with brinjals,onions,tomatoes .With this Brinjal sabzi little sugar also is added for taste .
Remember to keep the peeled or sliced brinjal in water ,otherwise due to oxidation it will turn black/brown in color .
Brinjal sabji is good to be served with chapattis or with hot rice & dal .

Here is the ingredients & cooking methods for brinjal sabji with sugar.
chopped brinjal - 6 to 8 nos
chopped tomatoes - 2
turmeric powder - 1/2 tsp
chopped onion - 1 or 1.5 nos
sugar - 1 tsp
chopped/garnished corriender leaves
spices to taste
red chilli powder - 1/2 tsp
ginger paste - 1 tsp
garlic paste/powder - 1/2 tsp
salt as per taste

Method of cooking brinjal sabji-Baingan sabzi with sugar recipe

Wash & cut the brinjals into circular or semi-circular slices & keep them in water after chopping them as I told earlier .
Now take a pan & heat oil ,fry chopped onion till it turns brown .Add chopped tomatoes to it and fry it ,now add salt ,turmeric powder,spices,ginger paste,& garlic powder to it –Stir properly & keep the paste separately .
Now again take the pan (better you wash the pan again ) ,heat 3-4 teaspoons of oil,Add chopped brinjals & fry them ,close the pan with a lid to cook it properly .Now add the paste we made earlier to this ,stir well,add sugar as per your taste.Stir until all the vegetable ingredients are well cooked .Now garnish it with coriander leaves .Serve it in a bowl with a lemon by its side .
That’s all ,your tasty brinjal sabji or baingan sabsi is ready with in 10 minutes . As per the above measurements around 3-5 person could be served with this baingan sabji .Baingan sabzi with sugar recipe is ready now
