Brinjal with Potato curry ,wow it is a mouth watering recipe , I like to have this recipe with hot , soft Chapati ,poori or with rice & ghee .
Brinjal potato curry ; as the name suggests you need Brinjal & potato are the the main ingredients along with the common ingredients like salt,oil , ,onion,tomato,& powders like red chilli powder , turmeric powder & coriander powder .
Brinjals(violet) – 8
Tomato – 2
Onions -2(medium)
Red chilli powder – 1tsp
Turmeric – 1tsp
Coriander powder – 1/2tsp
Oil – 3tsp
Salt to taste
Potato – 3(medium)
Cumin powder – 1/2 tsp

Method of cooking Brinjal potato curry

Brinjal potato curry is prepared in a pan ,so keep ready your pan ,wash & cut the brinjals into quarters ,finely chop tomatoes & onion ,peel & cut tomatoes into cubes .
Take the pan ,pour oil into it & after heating the oil add - nions,tomatoes ,turmeric ,chilli powder,cumin,coriander powder and saute till onions are translucent.
Now add brinjal & potato pieces along with required salt & cook till all the vegetables are well cooked & brinjal potato curry reached its consistency .
