Brinjal fry recipe is a party dish .Brinjal fry is a celebrity among
brinjal recipe .Brinjal fry or baingan fry is easy to
cook & so tasty . In some restaurents too this fry with brinjal is
served with importance .But the fact is that the same brinjal fry you
could make at your kitchen with in minutes
For cooking brinjal fry you need baby brinjals ,onions,ginger garlic paste
,coriander leaves , & kobbari karam podi ,which is made with cocunut
,chillies,cumin seeds ,bengal gram ,salt .
The process involved to make Brinjal fry are – Washing brinjal,chopping
vegetables & frying
Here is the ingredients required for Brinjal fry or fried brinjal
6 baby eggplants
2 onions, chopped finely
2 tsp ginger-garlic paste
2 tbsp kobbari karam podi
2 tbsp oil
coriander leaves to garnish
Kobbari karam Podi:
2 cups dry coconut, grated
8 red chilies
1 tbsp cumin seeds
50g roasted Bengal gram
Salt to taste - grind all the ingredients to make powder
Brinjal fry method of cooking
Cooking of Brinjal fry may take approximately 15 minutes .
First of all take the Brinjals ,wash it & cut it lengthwise into 3
or 4 pieces up to its ¾ of its length ,the brinjal pieces should
not be separated .
Add oil in a pan ,after oil heating up ,add onions & garlic ginger
paste ,fry them until golden brown .Now add brinjals & fry them in
low flame until they are tender .
Add now the Kobbari powder we have prepared along with salt & fry
again for 5 minutes .Now our brinjal fry is ready ,this could be served
to 4 people.
