Brinjal curry recipes method of cooking
Brinjal is also known as eggplant or baingan or as aubergine .Brinjal
is good to reduce blood cholesterol .
Brinjal curry recipes is very tasty with rice or with chapattis .Brinjal
curry is prepared with brinjal,ginger,coriander ,tamarind juice,turmeric
powder,chana dal,Urud dal ,mustard seeds,cumin seeds,green & red chillies,oil
& salt – all these are available in any kitchen .
For the preparation of Brinjal curry you need a thick bottom pan to cook
& you may need mixi or grinder to grind green chillies, ginger, coriander
leaves nicely to make a paste .
Ingredients for Brinjal curry recipes
Medium size brinjals -8 (not round ones)
Ginger -2inches
coriander-equal to ginger
tamarind juice( thick) -1 t.sp.
turmuric powder-1/2 t.sp.
chana dal--1 t.sp
Urud dal-1 t.sp
mustard seeds-1/2 t.sp
cumin seeds-1/2 t.sp
oil-4 t.sp.s
green chiilies 5
red chillies -3(cut into pieces)
salt to taste
Method of cooking Brinjal curry
.Grind green chillies, ginger, coriander leaves nicely to make paste
& brinjals cut into 2 inch pieces
In a thick bottom pan heat oil . Put chana dal, urud dal, cumin seeds,
mustard seeds ,after it splutter add red chillies and fry nicely.Add brinjal
pieces along with salt and turmeric & fry it for a while and cover
the pan with plate with water in it ,after few minute remove the plate
,if the brinjals are half cooked ,pour tamarind juice & the ginger
coriander paste & mix well .Close the pan ,but remember to stir inbetween
to avoid any burning of gravy or sticking to the bottom .After 6 or 7
minutes brinjal curry will be ready . Sprinkle coriander leaves .
Brinjal curry tastes so great with white rice served with ghee .Yummy
