Brinjal bartha or Baingan Bartha reciepes
Brinjal Bartha or Baingan bartha recipe is a traditional tasty recipe
,this could be used with parathas ,chapattis or with rice it is made with
brinjal,onion,chillies,ginger,tomatoes,red chilli powder,turmeric powder,dhania
powder . You can prepare brinjal bartha with or with out an oven .
Here we discuss two methods to cook Brinjal Bartha – the difference
between these two methods lies in the way of cooking baingan .In the first
method the baingan/brinjal is cooked using Oven or directly keeping it
on your gas burner .In the second method the brinjal is cooked along with
the ingredients itself .
Method 1 for making Brinjal Bartha :
Ingredients for Brinjal Bartha :
1 eggplant (brinjal) (should be fat and big),
1 onion(one or two),
3-4 greenchillies,
1 tablespoon fine-cut ginger,
3 small-tomatoes,
1/4 tsp red-chilli-powder,
1/2 tsp-haldi/turmeric powder,
1 tsp dhania-powder,
salt to taste,
oil & jeera for sauté,
green coriander to garnish.
Preparation of Brinjal Bartha
Step 1 : Cook Baingan method 1 ) If you have an oven preheat oven to
300 degress & place the Brinjal in the baking sheet and keeping checking
it while boiling .
Method: If you have an oven, preheat the oven to 300 degrees. Put the
Brinjal in the baking sheet and keep checking it/turning it till the outer
skin starts cracking and can be peeled off without difficulty. Remember,
this process has to be done carefully so that the inner part of the Brinjal
is also cooked well. If you have a gas burner, put the Brinjal directly
on the burner and keep turning it till the outer skin starts cracking
and can be peeled off easily.
Allow the Brinjal to cool a little. Peel the outer skin of the Brinjal.
When the skin is removed, crush the Brinjal well so that it has an even
consistency. Put some oil in a pan. When hot, put some Jeera (cumin seeds)
into it and put the (not so finely chopped onion) into it. When the onions
are light golden brown, add the (finely cut)green chillies and (finely
cut)ginger to it. Heat it for 2-3 minutes. Add all the masalas. Add the
Brinjal to it. Stir it well and crush the Brinjal as much as possible.
Heat it for 5 minutes. Garnish with coriander leaves and serve hot with
Parathas/Rice.
Method 2 cooking Brinjal Bartha
Brinjal Bartha /Baingan Bartha is a tasty recipe cooked with eggplants,ripe
tomatoes,onions,& black pepper – you need a large fry pan to
prepare Brinjal Bartha .Chapati or parotta is good to be served with Baingan
Bartha .

Baigan Bartha
INGREDIENTS
2 large eggplants, unpeeled, diced.
2 large ripe tomatoes, diced.
30 ml oil (or clarified butter)
2 large onions, finely chopped.
10 ml salt
5 ml black pepper
Preparation
Take a large frypan ,after heating up add oil & sauté the onion
till it turns golden brown
Add spices and stir for 1 minute ,add eggplant and tomatoes stir well
and cover it with a lid & reduce the heat –simmer it for around
30 minutes until the vegetables are mushy .Remove the lid & continue
cooking until most of the liquid gets evaporated .The finished dish should
be thick enough .
