This is an aloo baigan (brinjal) recipe ,a sabji made with potato &
brinjal .Sabji is also spelled as sabzi depending on the regional slangs
,any how in this aloo biagan recipie we use it as sabzi ,if you are more
familiar with sabji ,then consider all sabzi’s you come across as
sabji .
Normally we use the first ingredient’s name as the first part name
of the recipie ,here we consider aloo as the main ingredient so we name
this sabzi as aloo baigan sabzi .
All sabzis are gravy less thick vegetable mixture ,the main vegetables
are properly boiled and later mashed together to form a fine mixture ,the
masalas and seasoning ingredients are added to the mixture during its
preparation .
To prepare this tasty aloo baigan sabzi we need aloo & baigan ,oil
to cook,cumin seeds for seasoning ,onions & tomatoes,coriander powder,cumin
powder,turmeric powder & red chilli powder to make this sabzi hot
.
Here is the list of ingredients required for cooking aloo baigan sabzi
.
Ingredients for aalu baigan sabzi :
• 10 tender/small brinjals
• 3 tbsps sunflower oil
• 1 tsp cumin/jeera seeds
• 1 large onion
• 2 large tomatoes
2 large potatoes
• 1 tsp coriander/malli powder
• 1 tsp cumin/jeera powder
• 1/4 tsp turmeric/manjal powder
• 1/2 tsp red chilli powder/mulaku podi (optional)
• Salt to taste
• Chopped fresh coriander/malli ila to garnish
Preparation of Aloo Baigan sabzi :
• Cut cleaned egg plants into 1/4th pieces & keep them again
in warm water till cooking ,before cooking dry it .
• Cut/chop onion into fine pieces
• Cut tomatoes into small pieces/into 4 pieces
• Clean,peel & cut potatoes into 4 pieces each
• Chop coriander leaves
• Keep ready salt ,coriander powder,turmeric powder,chilli powder
& oil
Method of cooking Aloo baigan sabzi recipies
Take a deep pan ,heat the pan in medium flame ,when it is hot add cumin
seeds ,wait till it splutters,now add chopped onions & sauté
them till it turns transparent .
Now add baigan pieces & tomato stir to mix potato & baigan pieces
well & sauté it for two minutes .
Add the masala powders - coriander powder,turmeric powder,chilli powder,spray
/sprinkle little water of the mixture so that the masala powders will
get mixed well with the vegetables .
Now cover the pan with a lid & cook till the vegetables get cooked
well & the raw smell of the masalas disappears ,take care to avoid
any sticking & burnings .Stir them occasionally to avoid such things
.
After every thing in the pan cooked well ,remove the lid & transfer
the aloo baigan sabzi to the serving plate & garnish it with coriander
leaves .
Serve aloo baigan sabzi hot with roti or with chapattis .
Don’t forget to switch off the flame & secure your gas stove
after cooking aloo baigan sabzi recipe .
