Aloo baingan sabzi recipe
Aloo baingan sabzi is another receipe for aloo with baingan .The ingredients
for cooking aloo baingan sabzi are – ginger,green chillies,coconut,garam
masala,ghee ,mustard seeds,cumin seeds,asafoetida,potatoes,turmeric,coriander
,baingan etc .
Ingredients required for aloo baingan sabzi are given below.
1 1/2 piece of ginger root
2 minced hara mirchi (chilli)
1/4 cup shredded unsweetened coconut
1/2 teaspoon gharam masaala
4 tablespoon ghee
1 teaspoon black mustaard seeds
1/2 tablespoon whole cumin seeds
1/8 teaspoon asafetida
6 medium aloo, boiled & cubed
1 teaspoon turmeric
1 tablespoon coriander
1 small eggplant in 1 cubes
1 teaspoon salt
3 tablespoon fresh coriander, chopped
1 tablespoon lemon juice
Preparation of aloo baingan sabzi
• Boil aloo ,peel & cube it
• Cut baingan into cubes
• Mince chilli
• Grind ginger,green chillies & coconut with little water to
fine paste – add garam masala & pulse to it – keep the
masala paste aside
• Chop coriander
• Make 1tbs lemon juice
Method of cooking aloo baingan sabzi
In a pan heat ghee & add mustard ,cumin seeds into the hot ghee ,allow
them to splutter ,now add asafetids & add aloo cubes – fry for
five minutes ,now add the ground masala we have prepared for aloo baingan
sabzi to the pan ,Now add turmeric ,coriander,egg plant ,salt & fresh
coriander .
Now mix gently –cook in low flame till the liquid gets evaporated
& now add lemon juice & coriander leaves – now aloo baingan
sabzi is ready
Transfer aloo baingan sabzi to a serving plate & serve hot with chapattis
