recipe,Aloo is the name of potato in hindi & baingan or baigan for
brinjal or egg plant ,in tamil it is kathirikkai & in Malayalam baingan
is known as vazhuthananga .
So let us have look into the ingredients required to make this tasty &
yummy aloo baingan receipe .
A medium sized baingan ,purple type is preferred for this recipe,medium
aloos,tomatoes,asafoetida,cumin seeds,green chillis,ginger paste,coriander
powder,turmeric,paprika etc.
Ingredients:
• 1 medium purple eggplant (baingan), un-peeled, cut into 1/2? cubes
• 2 medium russet potatoes (aloo), peeled and cut into 1/2? cubes
• 4 medium tomatoes (tamatar) cut into 1/2? cubes
• 2 tablespoons chopped cilantro (hara dhania)
• 1 tablespoon oil
• Pinch of asafetida (hing)
• 1 teaspoon cumin seed
• 1 chopped green chili adjust to taste
• 1 teaspoon ginger paste (adrek)
• 1 tablespoon coriander powder (dhania powder)
• 1/2 teaspoon turmeric (haldi)
• 1/2 teaspoon paprika (dagi mirch)
• 1 teaspoon salt, adjust to taste
• 2 tablespoons water
• Oil to fry

• Cut baingan (egg plant) into half inch cubes ,without peeling
• Peel the potatoes & cut them into half inch cubes
• Cut the tamatar (tomatoes) into half inch cubes
• Chop coriander leaves
• Make ginger paste
• Chop green chillies
• Keep ready cimin seeds,hing,turmeric powder,turmeric,paprika,salt,oil
& water

The method of cooking baingan aloo sabji is simple to prepare ,the cooking
involves deep frying both potato pieces & brinjal pieces separately
& mixing the masala paste & later frying the masala with the fried
vegetables to make the baingan aloo sabji
Detailed method of cooking aloo baingan sabji recipe
Take a frying pan & pour oil till the pan is 1 1/2 inch of oil .When
the oil is hot enough fry the potatoes till they are done ,fry potatoes
all sides by changing the sides –remove the fried potatoes from
the pan with a slotted spoon ,so the oil will be drained out back to the
pan itself .
Now fry the baingan pieces till it cooked well & remove the fried
baingan from the pan with a slotted spoon .
To prepare masala paste ,take a small bowl mix the shredded ginger,green
pepper,coriander powder,paprika,turmeric & 2 tablespoons of water
to make a paste .
Now take a pan & heat 1 tbs oil & add cumin seeds when the oil
is hot & allow the cumin seeds to splutter ,add asafoetida (hing)
,add the spicemixture (masala paste) we have made & sauté till
the oil seperates from the spice mixture ,now add chopped tomatoes &
stir fry for a minute ,now add the fried aloo pieces (potato) & baingan
pieces & let it simmer for three to four minutes on medium low heat
.
If needed add 3 spoon of water & simmer for 1 minute ,switch off the
stove & transfer the hot aalu baingan sabji to serving plate .
Now serve the hot aloo baingan sabji with rotis or with chapattis
