As you might have guessed this chicken curry is prepared with coconut
.Keralites use coconut & coconut oil in almost all their foods ,it
is healthy and nutritious ,there is misconception that coconut oil will
increase body cholesterol ,which does not have any scientific base.
Let us have a look into the ingredients required to cook this tasty Keraal
houseboat chicken curry recipe .Chicken,onions,grated coconut,garlic cloves,coriander
and red chilli powder,ginger,green chilli,whole red chilli,turmeric powder,curry
leaves & coriander leaves etc
12 medium sized pieces (about 800 grams) of chicken
2 medium onion(s) sliced
2 cup(s) grated coconut
8 cloves garlic
1 tablespoon(s) each of coriander and red chilli powders
1 tablespoon(s) juliennes of ginger
2 green chilli(es) slit
2 whole red chilli(es)
1 teaspoon(s) turmeric powder
12 curry leaves
2 tablespoon(s) oil
2 cup(s) water
salt to taste
finely chopped coriander leaves for garnishing (optional)
How to prepare to cook Kerala chicken curry recipe
• Clean chicken & cut into medium sized pieces
• Slice onion
• Grate coconut
• Mince garlic & ginger
• Chop coriander leaves
• Keep ready all other ingredients required for Kerala chicken curry
Method of cooking Kerala chicken curry recipe
In a heavy bottomed pan heat half the oil meant for this recipe and when
the oil s hot add the garlic,coriander & chilli powders & the
grated coconut .Roast on low heat ,stir inbetween till the coconut turn
dark brown and an aroma of coconut oil rises .Allow to cook & grind
with little water to make this a thick paste .
Clean the same pan & heat oil ,when the oil is hot add the curry leaves,ginger,green
chillies along with chopped onions .Fry in medium heat for about 3 mins
or till the onion turn brown .Now add the drained chicken pieces ,turmeric
powder,whole red chillies ,water and the coconut paste .Sprinkle salt
to taste .Mix well ,Cover and cook on low heat for about 25 mins or till
the chicken is fully done.Now our Kerala chicken curry is ready .Remove
from heat transfer to a serving bowl .
Garnish the Kerala chicken curry recipe or Kerala Kozhy curry recipe with
finely chopped coriander leaves .
